Just found your new lazy summer dinner hero: Fried Rice Shakshuka – and YES, it’s as good as it sounds. I used leftover rice, @Goldentastesalads chunky tomato dip, a spoonful of garlic confit, and eggs right on top. Fast, easy, and totally addictive. One pan, no fuss, and the whole family devoured it.

Ingredients

2 cups cooked rice

1 container of @goldentastesalads tomato dip

1 container of @goldentastesalads chunky tomato dip

Tbsp. Of @goldentastesalads garlic confit

Ketchup

Eggs

Chopped parsley or cilantro

Grated Parmesan

If you don’t have the dips – just use either 1 cup of tomato sauce or crushed tomatoes

And some minced garlic

Instructions

Mix the rice with the dips and garlic till well combined.

In a large frying pan, add oil and then spread out the rice in the hot oil in the pan. Then add ketchup and spread on top

. Let cook for 10 minute

Using the back of. Spoon, make a dent in the rice and then pour in a large egg.

Repeat with as many eggs as you want.

Cover loosely  and cook for another few minutes.

Remove from heat and then garnish with the parsley and Parmesan.
