Hot Cabbage Pesto Salad

Cabbage Love is real in my house. We truly love it in every form and one of my favorite way of eating it , is this hot cabbage pesto salad.

Very easy to make, and yes, you can totally use pre checked bagged cabbage for this. 

Works fantastic as a side dish or just straight up as a salad. Add some shredded chicken and you have an amazing meal. 

Ingredients

For the cabbage:

1 head red cabbage, sliced thin

1 head green cabbage, sliced thin

1/3 cup oil

3 tsp. Salt

2 tsp. Black pepper

2 tbsp. Garlic powder

2 tbsp. Minced onion

For the Pesto

Bunch fresh parsley

3 garlic cloves

1 cup sliced almonds

2 tsp. Salt

1 tsp. Black pepper

2 tsp. Smoked paprika

3 tbsp. Oil

1/2 lemon juiced

Raisins

2 tbsp. Honey

Instructions

Mix your cabbage with the oil and spices well. Throw onto 2 parchment lined baking sheets and spread out well. Bake on 350F for 25-30 minutes till cooked and slightly crispy on the edges. 

Place into your salad bowl.

Make your pesto by throwing all the ingredients into a blender and processing until you have a somewhat smooth and chunky pesto.

Add the lemon juice to cabbage and mix. Then add the pesto, raisins and honey and mix. 

Serve and eat warm.
