Small Batch Creamy Spinach Rice Soup

When you just want soup for a few, this is my go to. It’s hearty and is a meal by itself if you want for lunch, dinner or just have it as a snack. 

Full of delicious vegetables it is the perfect small batch soup for any day. It takes a total of 40 minutes from start to finish to make. 

Can totally add shredded chicken or ground beef to this soup for added protein and a fuller one bowl meal. 

Ingredients

2 tsp. Oil

1 onion, diced

2 carrots, diced

3-4 celery stalks diced

1 cup frozen @pardesfarms spinach, semi defrosted

1/2 cup jasmine rice

3 tbsp. Tomato paste

2 tsp. Salt

1 tsp. Black pepper

2 tsp. Not Chicken spice (or can use a bullion cube)

2 tsp. Garlic powder

2 tsp. Dried thyme

2 tsp. Minced onion

4 cups vegetable broth

2 cups water (or can use more broth)

1/2 cup coconut milk (or can use any but milk or cream)

Instructions

In a pot, sauté the onions, celery and carrots for about 6 minutes. Add the spinach and mix well. Then add the rice, tomato paste and all the spices and mix till everything is incorporated. 

Pour in the broth and water and bring to a boil. 

Lower flame and let simmer for 20 minutes. When rice is cooked, add the coconut milk, mix well and then serve.
