Chocolate Covered Strawberry Cookies
Tastes like a chocolate covered strawberry.Â
Ingredients
2 1/2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup (1 1/2 sticks) margarine or butter at room temperature
1/2 cup sugar
1/2 cup confectioners sugar
1/4 cup canola oil
1 egg
1 bag (2 cups) @pardesfarms frozen strawberries defrosted with 1/4 cup juice
rainbow sprinkles
Instructions
- Cream together butter, oil, sugar, and confectioners sugar until fluffy, about 3 minutes. Add egg and 1/2 the strawberries with the juice and beat to combine. Add dry ingredients and mix just until dough comes together. Dough will be very soft.Â
2 Pre-Heat oven to 350°F. Line two baking sheets with parchment paper.
- Use 2 spoons to dollop the mixture onto the parchment paper. Leave room they will spread. Press in some more of the serrated strawberries onto the tops of the cookies.Â
3. Bake until cookies are golden at the edges, about 11 minutes . Let cool for at least 10 minutes.Â
- Melt the chocolate with the coconut oil and spread onto the cooled cookie. Set in the fridge for 10 minutes and eat!Â
Original Tastebuds recipe was made with butter and I don’t have the exact amounts anymore. But the closest and best recipe almost identical (taste wise) to the Tastebuds ones.
