Apple Honey Mint Pepper Pesto Salmon 

Dreamed about this recipe last night so had to make it today. 

I wanted a whole fillet of salmon that would be a combo of sweet & herby with a little hint of a peppery bite with every taste.

I will say the next time I make this I am going to put a whole layer of sliced thin parsnips, onions, fennel and leeks underneath the salmon on the baking tray (drizzle olive oil, salt and pepper over them and then lay the fillet on top)  for extra goodness…

Today I was just playing around and was so happy with the results decided to post right away.

Ingredients

RECIPE:

1 fillet of salmon with skin on.

Honey

Onion powder

For the pesto:

1 whole onion, quartered

2 small apples, quartered (I left skin on but you can peel)

3 tbsp olive oil

Small Handful fresh mint

Small handful fresh parsley

2 cloves garlic

Salt and lots of pepper to taste.

Instructions

Lay your salmon on a baking sheet lined with parchment paper. Pre-heat oven to 325F (if have confection pre-heat to 350) 

Add the salmon to the baking sheet 

Cover the top of the salmon with a nice layer of honey. Season it with a little salt, pepper and garlic powder.

Place all your pesto ingredients in a blender and blend till just smooth 

Pour over the top of salmon.

Place baking sheet into oven and cook for about 35-40 minutes till salon is flakey and cooked through .

Enjoy!

This will freeze well and also can be served room temp.
