Aunt Rachel’s Honey Cookies

Seriously sooo much better than a HONEY CAKE! Trust me on this!

This has been my Rosh Hashanah tradition every year for the last 28 years and it’s something I look forward to making every single time.

Until this year Tunie always helped me make them, it was HER job. Super easy for kids to do because it’s a one bowl recipe!

Ingredients

Scale

4 cups flour

1 tsp. Baking soda

1 tsp. Baking powder

1 tsp. Cinnamon

Pinch of salt

1 1/8 cup sugar

1/2 cup oil

1/2 cup honey

3 large eggs

Instructions

Throw everything into a bowl and use your spatula just to mix everything together.

Then use gloves hands to mix the cookie dough well, don’t over mix.

You want the dough to stick together when you press it into a ball.

If your mix is too dry, add a little oil if needed.

To make your cookies, pinch a dollop and roll into a meatball size shape ball. Then press your ball in between your palms to flatten it.

Place on parchment lined baking sheet and bake on 325F for exactly 15 minutes.

Remove and let cool completely.
