BEER CHICKEN with MUSHROOM & ONIONS –

My fairly new favorite #onepan chicken dish that I have been making on repeat this summer.

There is just something absolutely delicious about this chicken dish. It’s truly melt in your mouth with all these savory flavors with just s hint of sweet caramelization, that’s just YUM!

Sometimes I also throw in some small diced potatoes with the onions and mushrooms.

Ingredients

RECIPE:

Chicken Legs, skin on with the bone.

3-4 tbsp. Oil

2 large onions, sliced thin

1 pint mushrooms, sliced

1 tbsp minced onions

2 tsp. Garlic powder

1 tsp. Onion powder

Pinch of dried mustard

2 TBSP. Dried parsley

Salt and pepper

1 small bottle of beer

Honey

Instructions

In a large skillet, heat your oil. Then add the chicken skin side down and pan sear on both sides for at least 10 minutes each side.

Remove the chicken and set aside.

Then add your onions and scrape the bottom of the pan with your wooden spoon getting all the good bits mixed in.

Add your mushrooms and spices, mix well and let it all cook down for a good 20 minutes.

If the pan is too dry, you can add a little more oil or your beer earlier to get those bits up from the pan.

Add your beer. Mix everything well and let it all cook some more for another 10-15 minutes.

Add your chicken back in to the pan.

Drizzle the honey on top of the chicken.

Then put in the oven uncovered at 350F for 50-60 minutes and let the whole thing bake till caramelized and sauce is halfway reduced.

Eat!
