Fluffy Kosher for Passover Brioche Rolls (Non-Dairy) 

These soft, fluffy, and slightly sweet brioche-style rolls use tapioca flour, potato starch, and coconut flour while incorporating gelatin,  bibegar, and seltzer for the best texture.

Dry Ingredients:

• ½ cup tapioca flour

• ½ cup potato starch

• ¼ cup coconut flour

1 tsp. baking powder (kosher for Passover)

• ¼ tsp salt

2 TBSP unflavored gelatin 

Wet Ingredients:

• 3 large eggs

• 2 tbsp honey or maple syrup

• ¼ cup coconut oil or avocado oil

• 1 tsp apple cider vinegar

• ⅓ cup seltzer or sparkling water

Egg Wash (Optional, for a glossy finish):

  • 1 egg yolk + 1 tsp water

Instructions

• In a large bowl, whisk together all the dry ingredients 

• In a separate bowl, whisk together the egg all the wet ingredients till smooth h.

4. Combine Wet & Dry Ingredients

• Gradually add the wet mixture into the dry ingredients, stirring until fully incorporated. 

•• Let the dough rest for 5 minutes to allow the coconut flour to absorb moisture.

•Slowly fold the batter again with the spatula and then let it rest for another 20 minutes before adding to your muffin tin.

Spray your muffin tin very well with non stick spray or oil. Then dollop the batter into the muffin cups 3/4 way full. 

7. Apply Egg Wash (Optional)

• If using, whisk 1 egg yolk + 1 tsp water and brush over the rolls for a shiny crus

Can you tell me how much baking powder is used for these brioche rolls? Both IG and your website don’t have the number of teaspoons for the baking powder. Thank you.
