Citrus Mustard Salmon with Spinach, Fennel & OnionsÂ
Simple easy salmon that is light and full of delicious flavors that you will lick the plate clean from.Â
Trust me, I have been known to slurp up the juices from the pan of this dish!Â
Seriously yummy!Â
Ingredients
RECIPE:
Salmon fillet
For the marinate:
1/4 cup Dijon mustard
1 lemon, juiced
3 cloves garlic, sliced thin
1/3 cup orange juice
3 tsp. Honey
Handful chopped up fresh parsley
Pinch of salt and pepper
1 red onions, sliced thin
2 leeks, sliced thin
1 fennel sliced thin
1 cup @pardesfarms spinach, defrosted and drained
Olive oil
1 lemon, sliced
Salt and pepper
Instructions
Mix together all the ingredients for the marinate.
In a small oven dish add olive oil to bottom of pan. Add all the vegetables, , and season with salt and pepper and mix.Â
Add the salmon fillets on top
Pour over top of the fish the marinateÂ
And then lay sliced lemons on top of fish.
Cover with parchment paperÂ
Bake in oven on 350 for 15 minutes
And then uncover and bake for another 15-20 minutesÂ
