
Crispy Ritz Mushroom Peanut Butter Thailandi Salad
One of my favorite flavor combinations to put in a salad. It worth every bite.
Ingredients
For the Crispy Ritz Mushroom Topping:
2 cups diced mushrooms
1 sleeve Ritz or Snacker crackers, crushed up
Oil
1 tsp. Salt
1 tsp black pepper
1 garlic clove, minced (I use @kosher_taste)
Handful chipped fresh parsley.
1pinch Red chili flakes (optional)
For the salad:
Chopped romaine
1 pepper, diced
3-4 cucumbers, diced
2-3 celery stalks, diced
Handful shredded carrots
2-3 stalks scallions, diced
For the Peanut Butter Dressing:
1/3 cup natural peanut butter
2 tbsp. Soy sauce
2 tbsp. Maple syrup
1 large lemon juiced
2 tsp. Toasted Sesame oil
1 tsp. Avocado oil
1 tsp. Black pepper
Pinch of dried ginger
1 tsp. Dried parsley
1 garlic clove, minced
Instructions
For the mushrooms:
Sauté the mushrooms in a bit of oil for 10 minutes with a little salt and pepper. Use the biggest frying pan you have and spread the mushrooms out so they can get crispy.
Add a little more oil and then crumble the crackers in. Add the rest of the ingredients, mix well and saute till everything crisps up. Set aside.
For the dressing, mix everything in your salad bowl till smooth.
Add all your salad ingredients into the bowl mix well and serve.
Add some smoked salmon for added protein.
