Double Chocolate Tahini Muffins (no flour)

Ingredients

Scale

12 oz dark chocolate chips (more for adding in and topping)

3 tbsp. Avocado oil

7 large eggs , separated (you will only use 5 egg whites, make sure the eggs are cold)

3 tbsp. Maple syrup or coconut sugar

1 cup tahini paste

2 tsp. Vanilla extract

Instructions

In a bowl add 12 oz of chocolate and your oil and melt in microwave for 1 minute. Mix till smooth creamy chocolate. 

 

In 2 separate bowls, add one with your egg whites and one with your yolks. 

 

Add the melted chocolate to your yolk bowl, along with the maple syrup, tahini paste and vanilla extract. 

 

Whip your egg whites with an electric beater till you have soft peaks. Don’t get them too stiff. 

Gently fold your chocolate tahini mixture into your egg whites till fully combined. 

 

It’s ok if the batter is not airy and fluffy. 

 

Fold in some more chocolate chips. 

Line your muffin tin with paper and scoop up your batter into each liner. 

 

Add more chocolate chips to the top of your muffins. 

 

Bake on 350 for 12-15 minutes till baked.

 

Let cool and eat!

    Can you please clarify re the eggs? It calls for 7 but comment says will only use 5 egg whites. What about the others?

    • So sorry for the confusion. You want to use 5 whole eggs (large and separated) plus 2 egg yolks (large). You can save the 2 egg whites for one thing else. 🙈
