Easy Pickled Salmon

My aunt Rachel/Rochie really has the best and easiest recipes. This is one of our family favorites and it just is a fantastic different way to serve salmon throughout the holiday. 

There is just something about those creamy onions and that tangy salmon that hits the spot every time. 

Ingredients

RECIPE:

For the Pickled Salmon

6-8 slices of salmon fillet

1 cup sugar

1/4 cup water

1/2 cup white vinegar

1 lemon juiced

2 tbsp. Salt

For the Final Onion Pickle Mixture:

2 large onions, sliced

1 cup sugar

1/2 cup water

1/2 cup vinegar

2 tbsp. Salt

1 lemon juiced

2/3 cup mayo

4 bay leaves

1 TBSP. Pickling spice

Instructions

In a pot add all your ingredients for the pickled salmon. Mix well. Lay your salmon in the pot and cover to cook for about 12-15 minutes on medium high. 

While the salmon is cooking, add your sliced onions in a large Tupperware with a good lid. 

Add the water, vinegar, sugar, and salt to the onions and mix well. In a separate bowl mix the mayo and lemon juice and pour over the onions and mix well. Then add your cooked salmon to the top of the onions. Use a spoon and cover the salmon with the onions and marinate as best as you can. 

Add the bay leaves and pickling spice on top. 

Cover and shake for a few minutes.

Keep in fridge for a minimum of over night or up to 3 weeks tightly sealed .
