Edamame Crunch Salad with Ginger Garlic Sesame Dressing 

Another salad that you will be making over and over again – and the dressing on this one – you will be slurping up with a spoon – I guarantee it!! 🙏🏻🙏🏻

So good and really so easy! Also last beautifully in the fridge if packed well. 

Ingredients

Scale

RECIPE:

1 bag ready to eat edamame or boiled frozen edamame

3 Kirby cucumber, diced

1 large green pepper, diced

1-3 stalks scallions, diced

Handful parsley, chopped

For the dressing:

1 tbsp freshly grated ginger

3-4 cloves garlic, grated

1 large lemon, zested and juiced

3 tbsp avocado oil

2 tbsp. Sesame oil

2-3 tbsp sesame seeds

1 tsp. Onion salt

1 tsp. Lime pepper (or just pepper)

3 tbsp honey

Instructions

Mix all together and then add the veggies and mix well. Let the veggies sit for a few minutes in dressing before serving!

  1. The salad was delicious!
    I think I overcooked my frozen edamame because they were kind of soft but that did not deter the salad from being a hit! I also didn’t have a green pepper so I skipped it but it was still good!
