Fresh Granola Salad
Happy Tu B’Shvat! May we be blessed with a beautiful, warm, bountiful new spring Season with the Peace & Prosperity.Â
Ingredients
For the Salad
1 cup Farro, cooked
3-5 stalks of celery, diced
1 large cucumber, diced
1 fennel, diced
1 cup pomegranate seeds
4-6 pitted dates, chopped
10 dried apricots, diced
Fresh chives, diced
Toasted sunflower seeds
For the Mint Pistachio Pesto:
Handful fresh mint
1 shallot
2 garlic cloves
1/2 cup oil
2/3 cup pistachios
Lemon juice of 2 lemons
1 tbsp. Maple syrup
Salt and pepper
Instructions
In a large bowl add all your salad ingredients.Â
In a blender, blend your pesto ingredients till smooth. Pour over salad and mix well.Â
