Grandma Lankry’s Moroccan Cookies (Garifa)

Best cookies of LIFE!  This recipe is from one of the best Moroccan Cooks I know, and my adoptive Grandma. I adopted her, she didn’t really sign off on it LOL.

 

My best friend, Margalit Lankry, lent me her Mother in Law to bring you one of our favorite cookie recipes of all time. Not only are they super easy to make, they are incredibly delicious. A hint of sweetness in a shortbread like cookie, with all the savoriness. It’s an incredible bite to have with your tea or coffee.

Ingredients

RECIPE:

2 XL eggs

1 cup sugar

1 cup oil

1 cup orange juice

2 tbsp each of sesame seeds and fennel seeds

1 stick margarine

1 kilo flour (about 2 lbs use the to go container)

2 TBSP baking Powder

Instructions

In a large bowl, whisk the eggs. Then add the sugar, oil, juice, both seeds and margarine and mix well. Then add the Baking powder and slowly add the flour to combine till fully incorporated. 

Roll out onto lightly floured counter nd split into 4 logs. 

Then roll out each log with a Rolling pin on a parchment paper, till you form somewhat of a square. Then cut the edges with the party wheel. 

Then airate the dough with a fork or with the Moroccan pastry wheel (link on Amazon store) 

Cut into squares and bake 375F 20-25 minutes till golden. 

Then eat!
