Hotel Citadel’s Celery Salad 

Seriously addictive and I totally understand why my friend @margalitlankrydesigns was obsessed with it on her last trip to Jerusalem. 

She just kept on sending me video after video until I had to recreate it myself! 

It’s just celery with a ton of fresh herbs, crunchy nuts and seeds (any can work) and a little hint of sweetness in every bite with some dried blueberries (they used craisins – but OMG the berries are next level) 

The real winner though is that full blown LEMON dressing. You must have a lot of fresh lemon juice – I took the 2 biggest lemons I could find – it’s key, combined with that touch of honey. 

The best salad my family could not get enough of it and it’s on repeat here in my house – I’ve been making it daily!

You can also add some fennel in the mix with the celery for even more crunchy veggie goodness and a twist. 

Ingredients

Scale

RECIPE:

2 bunches of celery, chopped

2 large shallots, diced

1 bunch fresh parsley, diced

1 bunch fresh cilantro, diced

Handful toasted sunflower seeds

Handful chopped pistachios

Handful toasted sliced almonds

1/2 cup dried blueberries

For the dressing:

2 large lemons, juiced (can also add 1 small like for more sourness and flavor)

1/4 cup oil

1.5 tsp. Salt

1 tsp. Black pepper

1 tsp. Garlic powder

1/4 cup honey

Instructions

Throw everything into a bowl, whisk together the dressing and pour over the salad and mix. 

Eat!

  1. I just made the Celery Salad tonight and just loved it. My husband liked it, too. It was very light and tasty! I think it will hold very well for several days.






  2. Best salad I’ve had in a long time, maybe ever! I used green onions instead of shallots and fresh blueberries, just because that’s what I had on hand. So flavorful!!
