Truly all year round – these are my go to Attachment item I make for Attachment. 

They are fantastic for snacking or travel.

They freeze beautifully and are delicious in a lettuce wrap or chopped up into salads or eaten whole with some mashed potatoes . 

Key steps to making them juicy. 

Using zucchini shredded – can do in processor or with a grater – adds flavor and moisture – better then eggs or any liquid 

And the baking soda – truly tenderizes the meat 

One of my favorite recipes – winner for the whole family. 

Ingredients

Scale

Recipe:

1.5-2 lbs ground meat

For the Food processor:

5-6 cloves @kosher_taste garlic

Handful of parsley

2 tbsp oil

1 small zucchini

1/2 onion

1 tsp. Salt

1 tsp. Pepper

Spices for the Meat Mixture:

1/2 tsp. Baking soda

2 tsp. Sweet paprika

2 tsp. Salt

1 tsp. Black pepper

1 tsp. Cumin (optional)

Instructions

In a food processor, process the garlic, parsley, oil, zucchini, onion salt and pepper

Add it into a bowl with the ground meat and the spices for the meat. Mix well.

Keep in fridge for 30 minutes minimum 

Then Shape your KUFTA sun small oval shape meat loafs and place on a well oiled sheet pan. 

Bake for 30-35 minutes on 375F 

I eat them in a lettuce wrap with @goldentastesalads spinach dip as my Shmear
