Ingredients
For the Coconut Flour Recipe:
6 large eggs
1/2 cup coconut flour
1/4 cup Gefen tapioca flour
1 1/2 tsp. Baking powder
1/2 tsp. Baking soda
1/2 cup sugar
1 tsp. Vanilla extract
1/2 cup oil
1/2 cup almond milk or non dairy whip
Instructions
Whisk the eggs till they are fluffy in a large bowl. Then add all the other ingredients and whisk till smooth.
Line a 9×13 baking sheet with paper and spray well. Pour your batter into the pan and spread out evenly.
You can top with fresh fruit or chocolate chips as you desire.
Bake for 20 minutes on 350F
Let cool a few minutes before serving. Serve with maple syrup.
Notes
For the Cake Meal Recipe:
1 cups Manischewitz GF cake meal
1/4 cup Gefen potato starch
1 Tbsp. baking powder
1/2 cup white sugar
1/2 teaspoon salt
5 eggs
1/2 cup water (more if needed)
2 tablespoons oil
Whisk everything together and follow rest of directions above for the pancakes.
