Cauliflower Fried Rice with mushrooms. 

Let me tell you this recipe… SHOCKED ME! 

I knew it was gonna be good, I just didn’t realize how OMG GOOD it was. 

I legit would say this over regular fried rice any day. It tasted like the REAL THING. 

The key I think was, the coconut oil (highly recommend – no coconut flavor tasted, I promise) and that extra umami’s flavor boost from the KFP chicken consume I used. 

I really think you will be eating this a whole Pesach. It takes minutes to prep and is THE PERFECT side dish. 

Cauliflower Fried Rice

Ingredients

3 tbsp. Coconut oil

2 onions, diced

1 pint diced mushrooms

1 bag @pardesfarms Cauliflower Rice, defrosted

2 tsp garlic powder

1 tsp onion powder

1 heaping tsp. KFP chicken consume

Salt & Pepper to taste

2 eggs

Handful fresh parsley, chopped

3-4 scallions, diced

Instructions

In a large frying pan heat the oil and sauté your onions and mushrooms for 10 minutes. Add the cauliflower rice and all the spices and mix well. Cover pan and let cook down for 3-5 minutes. 

Uncover pan and add the eggs. Quickly mix the eggs into the pan with the veggies. 

Then add the parsley and scallions and mix well. Cook for another minute, taste for salt and pepper. SERVE
