Ingredients
For the Pesto:
3 lemons, zested & juiced
4-6 garlic cloves
1 bunch of mint
3 tbsp. Avocado oil
1/4 cup pine nuts or sliced almonds
2 tbsp. Mustard
1 tsp. Salt
1/4 tsp. Pepper
1 side salmon
Instructions
Place all your pest ingredients in a blender and blend till smooth.
Add your salmon to an oiled parchment lined baking dish.
Pour the pesto dressing over the salmon and bake uncovered on 375F for 20 minutes.
Eat!
