Marrakesh Cumin Carrot Ribbon Salad

One of the best dressings in a salad I’ve ever eaten. It’s addictive with some of the most intense flavor that you will absolutely love eating. 

Super easy to make. 

Ingredients

For the Cumin Vinaigrette Dressing :

1 tbsp. Cumin

1/4 cup avocado oil

2 tsp. Sesame oil

2 heaping tbsp. Dijon mustard

3 tbsp. Honey

1 lime, zested and juiced

1 tsp. Minced garlic

For the salad

3-4 carrots, ribboned with peeler

1 zucchini, ribboned

1 cucumber, ribboned

Fresh parsley, chopped

Handful toasted sliced almonds

1/4 cup sesame seeds, toasted

Handful golden raisins (warmed for a few minutes with the sesame seeds)

Instructions

In a large bowl whisk together all the cumin vinaigrette ingredients together. 

Then add all the salad ingredients into the bowl and mix. 

This salad can last in the fridge for about 2-3 days.

I sometimes like to add romaine for a heartier salad dish.
