Mememalka’s Giflte Kraut (stuffed cabbage)

This pot would feed all of us grandkids and then some. We never leave Mememalka’s house without one or two in a container for a midnight snack. 

Growing up, and until this day Giflte Kraut is something my grandmother made at least 1 a month for dinner. And there is never a single holiday that it is not served. Giflte Kraut is my family’s Love Language. 

Ingredients

1 head of cabbage, leaves separated and boiled for a few minutes till soft. The leaves that can’t be used for rolling cut into small pieces and add to tomato sauce

For the filling:

2 lbs ground beef

1 .5 cup Basmati rice

1 XL white onion finely diced

Salt and garlic powder (about 1-2 tsp. Each)

2 tbsp. Oil

2 eggs

Pinch of pepper

For the Sauce:

2 cups tomato juice

6 oz can tomato paste

8 oz can tomato sauce

2/3 cups brown sugar

2 tbsp/ lemon juice

1 tsp. Salt

Pinch of white pepper

Instructions

For the Filling: 

Mix everything together in a bowl till fully incorporated

For the Sauce: 

Pour everything into a bowl and mix. Then place into a pot. Add the cut up cabbage to the pot. 

And bring to a low simmer.

Make the cabbage rolls. Add a large dollop of meat mixture into one of the softened cabbage leaves. Fold and roll into a nice little tight burrito like roll. 

Place seam side down into the simmering tomato sauce mixture. 

Repeat until cabbage leaves are done. With leftover meat mixture, make little balls and add to the pot. Cover pot and let simmer for 2 hours. 

This freezes fantastically.
