One Pan Roasted Grape Chicken

Easy & Truly Delicious. 

I have been making this chicken for years and it’s still stands the test of time. 

The gravy alone is worth the really little effort it takes to make this recipe. 

Ingredients

For the Marinate:

5 chicken bottoms

1 tsp. Salt

1 tsp. Pepper

1 tbsp. Dried thyme

3 cloves @kosher_taste garlic, minced

2 cubes @kosher_taste frozen ginger

3 cubes @pardes farms frozen parsley

3 tbsp. Oil

3 tbsp. Red wine vinegar

For the Chicken:

1 large white onion, sliced

1 large red onion, sliced

1 bunch of black or red grapes

Instructions

In a large bowl add all your ingredients of the marinate and mix well. Let the chicken sit in the marinate for a good 30 minutes. 

In a large baking dish, got the bottom with oil and then add your onions. Add the marinated chicken on top, add the extra marinate on the bottom of the bowl as well. 

Then place your grapes all around your chicken.

Then cover with wet parchment paper and bake on 400F for an hour and then uncovered for 30-45 minutes till the tops of the chicken are golden. 

Serve hot.
