Onion Ring Potato Latkes

A new Chanukah tradition in my house. These are freaking fire 🔥!! 

 

You must try these, this Chanukah. Super simple to make. 

Ingredients

For the Potato Latke

2 large potatoes, peeled and grated

2 eggs

Salt & pepper to taste

For the onion rings:

2 large onions, sliced into rounds

1 cup cornstarch

2 cups bread crumbs

3 eggs, whisked

Oil for frying

Instructions

In a bowl, grate your potatoes and then mix in the eggs, salt and pepper.

Set aside. 

 

Once you have cut your onion rings , dredge them first in the cornstarch, then the egg and then the bread crumbs. 

 

Heat a large frying pan with oil (just enough to coat the pan very well)

Add your onion rings, a few at a time, and pan fry on both sides for a few minutes. 

 

Then fill the middle of the onion ring with some of the latke batter and press down. 

Let it fry for few minutes and then flip. 

Fry again for another few minutes and then flip.

Do this twice until you have. Nice golden crusty latke on both side.

 

Serve with @Goldentastesalads beet horseradish and sour cream
