Passover Chocolate Chip Cookies

Game Changer – these cookies have NO NUTS and uses coconut flour and legit I would eat them all year round. They are spectacular .

Super easy to make, my only tip is don’t over mix the batter – use your hand mixer and spatula to get that perfect blend. 

Ingredients

RECIPE:

1/4 cup coconut flour

1/2 cup tapioca flour

1/2 cup potato starch

1/2 tsp. Baking soda

1/2 tsp. Salt

1 cup oil

1 cup packed brown sugar

1/2 cup granulated sugar

1 large egg plus 1 large egg yolk

2 tsp. Vanilla extract

Chocolate chips

Instructions

In a small bowl add  all the flours, starch, baking soda and salt. 

In another bowl add the oil and sugars and using a hand blender cream for a few minutes, then slowly add the eggs. Then add the vanilla. 

Cream the mixture till everything is combined and smooth. 

Slowly add the flour into the creamed sugar mixture, using a hand blender on slow.

As the mixture just is combined, switch to a spatula and mix till you don’t see any more of the flour. 

Add the chocolate chips and combine. 

On a parchment lined paper, add a large spoon dollop of the batter. Spread out the portions on the pan, because cookies will spread. 

Add a few more chips in to each cookie 

Bake on 350F for 15 minutes.

Let cool completely and eat!
