
Passover Granola Cookies
Nutty sweet & salty deliciousness ⭐️kosher for Passover
Last year I made a simple almond cookie with egg whites that was easy and delicious. But this year I wanted just a tad more to my cookie crunch.
These are outrageous and taste like a healthier version of a Cadbury chocolate – you know the ones that have nuts, raisins and chocolate – i LOVE THOSE.
I called them granola cookies though, because you can totally crumble this up and use these cookies as a topping to ice cream or dip them in milk for a granola breakfast.
*you need to make a batch of my coconut condensed milk for Passover for this recipe – BUT ITS WORTH IT!
Ingredients
Recipe:
About a handful of each of the nuts:
Chopped cashews
sliced almonds toasted
chopped pecans
1/2 cup coconut chips (can use sweetened or unsweetened)
1/3 cup mini chocolate chips
1/4 cup raisins
You should have about 2.5 cups total of all these ingredients in your bowl
1/2 cup plus 2 tbsp. Coconut condensed milk
Instructions
Throw all the nuts, coconut, chips and raisins in a bowl and crush up with your hands slight. Then add the coconut condensed mil and mix very well making sure everything is well coated.
Take a spoon and add big dollops of the mixture to a parchment lined baking sheet.
Don’t over pile the mixture you want them to hold together but not be too thick.
Bake for exactly 14 minutes on 350F.
Then let them cook completely before touching them. Otherwise they will fall apart.
Keep in freezer for extra goodness or a tightly sealed container on your counter.
