Quick Corn Chowder

We are addicted. Best soup we have had in a long time , all inspired by my friend Osnat who made this for thanksgiving and we were all blown away. We ate bowls and bowls of it that meal. 

So easy to make because literally everything comes out of my pantry or freezer and takes minutes to put together.

Ingredients

3 tbsp. Oil

1 large onion, diced

1 package deli turkey, diced

1 package of beef fry, diced

1 cup shredded carrots

16 oz can cream of corn

16 oz can sweet corn kernels

1 16 oz can Potatoes

2 tsp salt

1 tsp. Black pepper

2 tsp. Sweet paprika

1 tsp. Smoked paprika

1 tsp. Garlic powder

2 tsp. Onion salad

2 cubes frozen @pardesfarms dill

4 cups chicken broth

1 cup water

1/2 cup coconut milk (full fat)

1 lb bag frozen corn

1 bag @pardesfarms mini broccoli

Instructions

In a large pot, salute the onions, turkey deli and beef fry for about 10-12 minutes till crispyish. Remove onto plate and set aside.

On a separate baking sheet, spray it well with oil and add the broccoli and 1/2 the bag of corn. Spray with oil and season with salt and pepper and bake on 400F for 20-25 minutes 

In the same pot add the carrots, all the cans of corn, the potatoes, the seasonings and mix well. Then add the broth and water and bring to a boil.

Then using your blender, blend till smooth. Then add in your coconut milk and mix well.

Add in the broccoli and corn, the cooked deli meat, mix and eat!
