Ingredients
Recipe:
2-3 Persian Cucumbers, sliced thin
1 red pepper, sliced thin
1 scallion, diced
Huge dollop of cottage cheese
Huge dollop of @goldentastesalads crunchy pickle dip (see sub down below)
2 tsp. Mustard (I used the Trader Joe’s pickle mustard but you can use any)
Instructions
Throw it all in a container and mix well by shaking and then enjoy!
For the pickle dip sub – 1/3 cup mayo with handful diced gherkin pickles, half lemon juiced, pinch of salt, pepper and garlic powder – mix all together
