Ranch Cucumber Salad

One trend that’s NOT getting old for me yet! 

My latest version of the cucumber salads.

Wanted something ranch, creamy and tangy and this just hit the spot perfectly! 

Ingredients

Scale

Recipe:

2-3 Persian Cucumbers, sliced thin

1 red pepper, sliced thin

1 scallion, diced

Huge dollop of cottage cheese

Huge dollop of @goldentastesalads crunchy pickle dip (see sub down below)

2 tsp. Mustard (I used the Trader Joe’s pickle mustard but you can use any)

Instructions

Throw it all in a container and mix well by shaking and then enjoy! 

For the pickle dip sub – 1/3 cup mayo with handful diced gherkin pickles, half lemon juiced, pinch of salt, pepper and garlic powder – mix all together
