Next Level ⭐️ kosher for Passover Potato Idea

This came out legit amazing and your family is gonna go crazy for it! 

Ingredients

For the KUGEL ROLL UP SHEET

*this will make 2 11×16 sheets

8 Yukon gold potatoes, peeled

4 large eggs + 2 egg whites

1/2 cup potato starch or Tapioca flour (the tapioca flour will make for a lighter crust)

1 tsp. Salt

1 tsp. Black pepper

1 tsp @kosher_taste garlic, minced

Oil Spray

For the SMASH BURGER mix:

1lb ground meat (I used Turkey but can use any)

1 small zucchini grated

2 tsp. Sweet paprika

1 tsp. Smoked paprika

1 tsp. @kosher_taste garlic, minced

2 tsp. Salt

1 tsp. Black pepper

1 tsp. Onion powder

Mix together till combined

Instructions

In a food processor, process your potatoes till you have a nice outed mixture.

Then in a bowl mix in the potatoes with the eggs, seasoning and starch. Mix well. 

On a parchment lined baking sheet that has been very generously sprayed with oil, add a very thin layer of the potatoe mixture and spread it out thin. 

Then take the oil spray and spray super generously on top and bake for 35-45 minutes till the kugel is golden on the edges. 

Let it cool for a few minutes (5-8) and then roll up and set aside. 

Make the fried onions 

Make the Secret sauce by combining 3 heaping tbsp of @goldentastesalads Beet horseradish with 1/2 cup mayo. Mix till you have a gorgeous pink sauce 

 

Pastrami or Corn Beef (any deli- Turkey works also) 

Assemble: unroll the potato kugel.

Spread out the meat mixture, top with the fried onions and spread the secrets sauce.

Then top with the deli and from one end roll the kugel to a log.

Then shmear the extra secret sauce on top and bake on 350F for 35-40 till golden and done.

Let cool slightly before cutting.

This freezes great!
