Ingredients
3 sleeves of those half moon graham biscuit cookies covered in chocolate (or can just use regular tea biscuits or graham crackers)
2 cups heavy cream
2 tsp vanilla extract
Whip till thick
14 oz chocolate chips, melted (I do in microwave with a little oil)
2 bags mini marshmallows (melt in microwave 1/2 bag with 1 tbsp oil on one bowl) melt the rest with 2 tbsp oil in another bowl)
Instructions
Assemble in a deep dish that you e lined in a Tshape with parchment paper (so you can remove from dish after frozen and make it easier to cut)
Line the bottom of dish with the cookies, chocolate side up.
Shneur a thin layer of chocolate over the cookies covering completely.
Mix the whipped cream with the 1/2 bowl of melted marshmallows. Fold it in with a spatula as best as you can.
Throw that layer over the chocolate and spread out evenly.
Add more cookies on top and then cover that layer completely with more melted chocolate.
Now just add the rest of the melted marshmallow on top of the last chocolate cookie layer.
If you have a small burner brown the marshmallow – it adds extra flavor and goodness. But not a must.
Then add last layer of cookies.
Cover and freeze over night.
Remove from deep dish by pulling out with the parchment paper. In wrap the paper from the sides. And using a heavy duty sharp knife cut into sandwich size pieces.
You can do this now and freeze to have ready to grab and go or as you serve.
