SQUASH SCHNITZEL – the side dish that actually might get your kids to LOVE the VEGGIES. 

So this is totally baked no frying and it’s CRUNCHY & absolutely DELICIOUS. Like surprisingly DELICIOUS!! 

Ingredients

Scale

Acorn squash, cut into rounds

Sweet potato , peeled and cut into rounds

4 eggs, whisked

1 cup cornstarch

2 cups breadcrumbs

1/4 cup everything Bagel spice

Instructions

 Take your acorn squash and cut into rounds, scoop out the inside. Cut your sweet potato into rounds 

Add your everything Bagel spice to your breadcrumbs and mix

Now dredge your pieces in the starch then the egg and then the EB breadcrumbs. Makes@sure both sides are really coated well

Place on parchment lined baking sheet.

Spray well with oil on both sides

Bake on 375F for 40 minutes, flipping the squash half way through baking. 

Eat plain or with a good aioli dipping sauce.
