Stuffed Mushroom Sloppy Joe Sweet Potatoes 

Next level delicious and no MEAT!! 

 But I promise you, it really does taste like sloppy Joe. It’s one of my families  favorite meals and so easy to make. 

Ingredients

RECIPE:

4-5 sweet potatoes (I like the smaller thin ones they are sweeter) , washed

For the sloppy Joe:

3 TBSP. Oil

2 small pints of button mushrooms, diced fine

1 small onion, diced

Salt and pepper

2 cubes @kosher_taste frozen garlic

2 cubes @pardesfarms frozen parsley

1 bag @kosher_taste diced peppers, defrosted

1 tsp. Cumin

2 tsp. Sweet paprika

1 tsp. Smoked paprika

1 tsp. Maple syrup

2-3 tbsp. Bbq sauce

Pinch chili pepper flakes

Instructions

Poke holes in potatoes with fork and microwave for 10 minutes.

Sauté the mushrooms In a large pan with heated oil. Season with salt and pepper and let them cook for 10 minutes before mixing them. 

Mix then add the onions, the garlic and parsley and let cook down for another 6-8 minutes. 

Add the peppers and all the spices, with the Suri and bbq sauce and mix well. 

Let everything cook for another 10 minutes and then remove from flame. 

Take your cooked potatoes and slice in half. Lay them on an oiled baking sheet and then fluff and mash down the inside of the potato.

Then top the potato with the sloppy Joe mixture.

Grate your favorite cheese and top each potato 

Bake in 375F for 10-13 minutes till cheese has melted and slightly golden on top. 

Eat!
