Sweet Cabbage Noodle Kugel

I have been dreaming of this recipe for the last year and have tried endless amounts of noodle kugel recipes but didn’t love any of them. 

They weee all just too sweet and not melt in your mouth the way a kugel should be. 

Finally I decided cabbage and onions MUST be added and OMG did I hit on a perfect combo.

Literally what is being served on my table this upcoming Rosh Hashanah and beyond. It’s THAT GOOD! 

Inspired by Rivky Kupitz famous noodle kugel may her memory be a blessing. 

Ingredients

Scale

RECIPE:

1 large onion, diced

3 tbsp. Oil

1 bag of @kosher_taste shredded white cabbage

Pinch of salt and pepper

1 bag @manischewitz egg noodles, cooked and drained

1 cup sugar

1 cup raisins

5 large eggs

1 tsp. Cinnamon

1/2 lemon juiced

3/4 cup oil

1/2 cup oat milk

Instructions

Sautée  the onions in a large pan with the oil for about 8-10 minutes till softened and slightly browning. Add the cabbage and mix well with some salt and pepper to taste. Sautee till cabbage reduces in size and softens. 

In a large bowl add the cooked cabbage and onions and the rest of the Ingredients. 

Mix well.

Pour into a deep baking tin that’s been parchment lined. 

Bake on 350F for 1 hour. 

Cool and serve
