Can we normalize eating all the soups in summer please 🙏🙏

This is one of my favorites to make. It freezes like a dream and uses up stuff I have in fridge and freezer. 

Ingredients

2 tbsp. Avocado oil

1 large onion, diced

Carrots, diced (I used baby carrots because what I had but 2-3 regular)

3-4 stalks celery, diced

1 zucchini, diced

1 bag @pardesfarms mini cauliflower

2 tsp. Salt

1 tsp. Pepper

3 frozen cubes @pardesfarms parsley

2 frozen cubes @pardesfarms dill

2 tsp. Garlic powder

1 tsp. Minced onion

1 tsp. Curry powder

1 tsp. Turmeric

2 tbsp. Tomato paste

1 tbsp. Honey (optional)

2 cups vegetable broth

2.5 cups water

1/2 cup frozen spinach

1/2 cup farro

Instructions

In a large pot, sauté the onions, celery, carrots zucchini with all the spices. Let cook for about 10 minute on medium heat. 

Add the frozen cauliflower, the tomato paste and mix well. 

Then add the honey, vegetable broth and cover pot to cook for 25-30 minutes. 

Uncover, add the water , spinach and farro, mix well and cook for another 10-15 minutes.

Serve hot
