Zucchini Applesauce Chocolate Muffin

Tastebuds best sellers and one of my daughter’s favorite after school snacks. Truly easy to make, the apple sauce takes over for the oil. 

These are great toasted slightly with a little cream cheese if you want a little twist. 

Keeps great in fridge or freezer 

Ingredients

RECIPE:

2 cups shredded zucchini

1 cup applesauce

3 large eggs

2 tsp. Vanilla extract

2 1/2 cups flour

1 1/4 cup coconut sugar

1/2 cup cocoa

1 tsp. Cinnamon

1 tsp. Baking soda

1/4 tsp. Baking powder

Pinch of salt

Mini chocolate chips.

Instructions

 

In a large bowl mix all the wet ingredients.

Then in another bowl mix together the dry ingredients. 

Add the wet ingredients into the bowl of dry ingredients and using a spatula fold everything together till you get a pudding like consistency. 

Add the chocolate chips and mix.

Scoop the batter into prepared muffin tins and bake on 400F for 18 minutes.

Let cool and eat
