Vegetarian Chili

Ingredients

3 tbsp. Oil

1 cup @kosher_taste frozen diced onions

1 bag @kosher_taste diced mixed peppers

1 pint mushrooms

For the spices:

2 tsp. Cumin

1 tsp. Curry

1 tbsp. Sweet paprika

2 tsp. Smoked paprika

2 tsp. Garlic & onion powder

1 tsp. Minced onions

1 tsp. Chili powder

2 tsp. Dried parsley

2 tsp. Dried basil

2 tsp. Dried oregano

1 tsp. Turmeric

4 cans washed and rinsed beans (I use a combo black beans, cannaneli, garbanzo & red kidney – but any beans you like will do)

2.5 cups crushed tomatoes

3 tbsp maple syrup or honey

Instructions

Sauté the onions and peppers in a large pot and add half the spices 

Then add the mushrooms, beans and rest of spices and mix well. Then add the crushed tomatoes and honey and mix well. 

Cover and let simmer for 30 minutes. Uncover and let simmer another 10-12 minutes 

Serve and enjoy.
