
Chex Everything bagel Spice Pesto Salmon
Snacking Pesto? Totally a thing! This crunchy deliciousness has me hooked and lately I have been eating it with everything.Â
One of my favorite ways of using it , is encrusted a salmon fillet with it and baking it to perfection.
Crusty nutty crunch on the outside with a soft and flaky moist salmon on the inside .Â
You will become as obsessed as me!Â
Ingredients
For the Pesto:
1 bunch parsley
1 shallot, diced
3 cloves @kosher_taste peeled garlic
1 cup corn Chex
1/2 cup sliced toasted almonds
1 lemon, zested
1 tbsp. Everything bagel spice
1/4 cup oil (more if you like it more like a spreadable paste)
Salmon fillet
2 lemons, juiced
Extra lemon zest
Instructions
In a blender, zugsh all the pesto ingredients together till you get a crunchy sand like texture.Â
Place your salmon in a parchment lined baking sheet that has a little oil.Â
Zest lemon on top and pour the lemon juice over the salmon and let it sit for at least 10 minutes.
Then take your pesto crunch and pack it on the top of the salmon fully encrusting it.
Add some more EB spice if you like the flavor.Â
Then bake on 350F for 25 minutes
Remove from oven and let rest for a few minutes before cutting into it.
Serve hot, cold or room temp!Â
