Chunky Monkey Banana Cake

One bowl, a couple bananas and your hands is all you need for one of the best banana cakes you will make. 

This cake is not too moist that it holds up  when you are dunking ti into milk. It also has nice chunks of bananas through out, so when you bite into the cake you really enjoy the intense banana flavor with all the delicious chocolate and nut bits. It’s a party in your mouth. 

Ingredients

5 bananas

2 cups flour

1/2 cup white sugar

1/2 cup coconut sugar (can use light brown sugar)

3 large eggs

1/2 cup oil

2 tsp. Baking powder

1/2 tsp. Baking soda

1.5 tsp. Vanilla extract

Chocolate chips

Crushed candy pecans

Instructions

Throw everything but the chips and nuts  into a bowl and use your gloved hands to mush and mix the batter together. 

Then add the chocolate chips and the pecans and use a spatula to incorporate it. 

Line a 9×13 baking dish with parchment paper and pour your batter in to it. Smooth out with your spatula.

Bake on 350F for 30 minutes. The top should be golden and not jiggly.

Rotating the cake midway through.

Let cool and enjoy
