Crispy Homemade Chicken Fingers

Win win and they freeze beautifully. These are a must make for your quick dinners that your family will love. 

Ingredients

For the Chicken Filling:

1 lbs ground chicken

1 large potato, grated

1 small onion, grated

1 egg

1/4 cup seasoned bread crumbs

2 tsp. Salt

1 tsp. Pepper

1 tsp. Garlic powder

1 tsp. Onion powder

1 tsp. Sweet paprika

1/2 tsp. Turmeric

1 tsp. Dried parsley

For the Coating:

1 cup seasoned breadcrumbs

2/3 cup pretzel crumbs

1/3 cup sesame seeds

3-4 eggs, whisked

Instructions

In a bowl mix together all the chicken filling ingredients well. On a baking sheet lined with paper, spread out the mixture and flatten as best as you can.

Lay another parchment paper on top and smooth out. Freeze for 2 hours.

Using a sharp knife score and cut out your chicken fingers.

Mix together on a plate your crumbs and sesame seeds

Dredge your chicken finger first in the whisked eggs and then in the crumb mixture and set aside. Repeat with rest of chicken 

If you’re not using right away / freeze them now and fry later. Or if you see them getting a bit too soft, stick them back in the freezer for 20 minutes breaded before frying. 

In a frying pan, heat oil and fry the fingers on both sides till golden and fully cooked.

You can also spray them and place on a baking sheet and bake on 375F till golden.
