
Crispy Korean Meat Scallion Latke
I had an idea… and WOW! This came out so tasty and delicious and I think it’s another winner for my Latke menu on the 8 nights of Chanukah!
Seriously, would be so delicious with some special sauce & crunchy pickle dip.
My family gobbled it up and the crunch was next level 🙏
Ingredients
Recipe for the Latke:
2 large Yukon gold potatoes, hand grated
2 large eggs
Pinch of salt
1 tsp. Onion salt
1 tsp. Garlic powder
2 scallions, chopped
2/3 cup ground meat
For the slurry:
2 tbsp water
1/4 cup water
Oil for frying.
Instructions
In a bowl mix well together all the ingredients for the latke except for the slurry.
Heat your pan with a coating of oil and get it hot.
Add large dollops of the latke mixture to the hot pan and let fry for at least 3-4 minutes on one side.
Just as you see it becoming golden on that bottom side. Mix together your slurry and then spoon over the latke a nice spoonful of that slurry.
Let sink in and then flip the latke and let it fry on that side for another 3-5 minutes till golden. Flip gain a fry a few more minutes on both sides, till everything is cooked and crispy golden brown.
