⭐️when cheesy potato meets savory spinach⭐️

If you LOVE quiche you will go GAGA for this! Also so much easier to make!! 

Best thing you will make this Shavous holiday on your table. Trust me on this, it literally MELTS in your mouth. 

Ingredients

For the Mashed Potatoes:

2-3 pounds Yukon Gold potatoes, boiled and peeled

1 cup grated Parmesan cheese

1 tsp. Salt

2 tsp. Black pepper

1/2 stick melted butter

2 containers of @goldentastesalads Spinach Dip ( recipe to make your own in notes)

phyllo dough sheets

Instructions

For the mash potatoes:

Mash the potatoes till creamy and then mix in the rest of the ingredients and set aside 

To assemble:

  1. Take 2-3 sheets of phyllo dough and layer them on top of each other. Spread the spinach dip on the phyllo dough
  2. Add a layer of mashed potatoes to one end of the dough
  3. Add the fried onions on top of the potatoes
  4. Roll into a log
  5. Make 4 of these logs
  6. Oil your pie dish well, then add the logs into the dish till stuffed
  7. Take extra phyllo dough and crunch to cover and layer on top of the pie
  8. Smother the top with the rest of the spinach dip
  9. Spray the top with oil
  10. Bake on 400F for 25-30 minutes till golden on top.
  11. Serve hot

Notes

Make your own if can’t find by mixing 1.5 cups mayo, with 1/2 cup defrosted frozen spinach, 2 tsp. Minced garlic, 1 small lemon juiced, salt, pepper & 1 tsp. Honey – you can put in processor to make creamy
