Ingredients
For the Mashed Potatoes:
2-3 pounds Yukon Gold potatoes, boiled and peeled
1 cup grated Parmesan cheese
1 tsp. Salt
2 tsp. Black pepper
1/2 stick melted butter
2 containers of @goldentastesalads Spinach Dip ( recipe to make your own in notes)
phyllo dough sheets
Instructions
For the mash potatoes:
Mash the potatoes till creamy and then mix in the rest of the ingredients and set aside
To assemble:
- Take 2-3 sheets of phyllo dough and layer them on top of each other. Spread the spinach dip on the phyllo dough
- Add a layer of mashed potatoes to one end of the dough
- Add the fried onions on top of the potatoes
- Roll into a log
- Make 4 of these logs
- Oil your pie dish well, then add the logs into the dish till stuffed
- Take extra phyllo dough and crunch to cover and layer on top of the pie
- Smother the top with the rest of the spinach dip
- Spray the top with oil
- Bake on 400F for 25-30 minutes till golden on top.
- Serve hot
Notes
Make your own if can’t find by mixing 1.5 cups mayo, with 1/2 cup defrosted frozen spinach, 2 tsp. Minced garlic, 1 small lemon juiced, salt, pepper & 1 tsp. Honey – you can put in processor to make creamy
