Crunchy Red Pepper Salmon Bites

I love having these meal prepped in my fridge or freezer during the week. Truly delicious and makes for a great quick healthy protein packed lunch, snack or dinner. 

Super easy to make and packed full of flavor. 

Ingredients

4 sliced salmon with skin on, cut into cubes

1 container @goldentastesalads red pepper dip

1.5 cups fine panko crumbs

1/2 cup nutritional yeast

2 tsp. Smoked paprika

1 tsp. Salt

1 tsp. Black pepper

1 tsp. Onion powder

1 tsp. Garlic powder

Instructions

In a bowl add your salmon cubes. Then add the red pepper dip to the bowl and really coat your salmon well with the mixture. 

In a separate bowl or tray mix together the panko, nutritious yeast, and spices. Then coat the salmon cubes with the mixture on all sides. 

Place salmon on parchment lined baking sheet. Spray the tops with oil and bake on 400F for 20 minutes. 

Eat! 

Freezes well. Keep in fridge for a week

Notes

For your own pepper dip: 

Blend together 1 cup mayo, with 1/4 cup to 1/2 cup jarred roasted peppers. Add squeeze of lemon juice,  1 garlic clove, salt, pepper and some onion powder. Blend till smooth.
